Beef Vegetable Soup
Prep Time: 15 minutes
Cooking Time: 6-8 hours
Ideal slow cooker size: 4-qt.
1lb. chuncks of stewing beef
28-oz. can stewed tomatoes, undrained
1 tomato can of water
16-oz. pkg. of your favorite frozen vegetable
half a 10-oz. pkg. frozen chopped onions
1 1/2 tsp. salt and 1/4-1/2 tsp. pepper
2 Tbsp. chopped fresh parsley (optional)
1. Combine all ingredients in slow cooker.
2. Cover and cook on High 6-8 hours.
Double this recipe (using 7 qt. slow cooker).
Freeze any leftovers for a quick second meal.
